corn salad recipeWhen the temperature is too hot to heat up the house to cook, there’s always the option to make a salad. For me, I always love including a salad as a side but sometimes want to mix it up a bit. So with some farm fresh corn, I tossed together some of my favorite ingredients to make a corn salad. Yes, it’s cold, and the corn is uncooked. But there’s no reason to not enjoy fresh veggies. If you prefer your corn cooked, toss them on the grill before cutting them off the cob.

Ingredients:

  • Corn kernels from 3 ears of corn approximately 2 cups
  • 1 Cucumber- chopped into small pieces
  • 1 Small Onion – Chopped
  • 1/4 tsp Fresh Black Pepper
  • 1/4 tsp Sea Salt
  • 1/2 tsp Dill
  • 1/2 tsp Butter
  • 2 Tbsp Goat Cheese

Directions:

  1. Add your fresh corn, chopped cucumber and onion in a large bowl. Add in your spices
  2. In a small bowl, add your butter and goat cheese. Microwave on low for 30 seconds until soft and you’re able to mix them together. Add the mixture to the bowl and mix well.
  3. Refrigerate for 1 hour before serving.
