Alright, I’ve had a slow start to this month’s challenge but I’m on a roll now! When I was in Chicago recently I was given some coconut sorbet for dessert. Instantly I had to know how to make it. I know coconut isn’t a favorite flavor for everyone, but if you like it – this is a must try recipe!
Ingredients:
- 2 14 oz cans of coconut milk
- 1 cup sugar
- 1 1/2 cup shredded sweetened coconut
Directions:
- In a medium saucepan add in all of your ingredients. Bring to a boil while stirring constantly.
- Only boil a couple times, do not let your mixture burn.
- Pour your mixture into a bowl and cover with plastic wrap and place it in your refrigerator until it is completely chilled (1-2 hours).
- Pour into your ice cream maker and process for 25-30 minutes.
- Place your fresh sorbet into a container and place in the freezer for at least 2 hours until fully set.
Yield: About 1 1/2 quarts!
