Left Over chicken Salad Recipe
This is one of my favorite recipes to make in the summer – and it doesn’t last very long in our house. Again, it’s one of those recipes that I usually make after I make homemade chicken stock, or even after pulling a chicken out of the rotisserie. Full of flavor, easy to make without heating up the house and great for picnics or whatever you want!

Left Over chicken Salad Recipe

Ingredients

  • 1-2 cups of shredded leftover chicken
  • 1 Medium Onion – diced
  • 2 stalks of Celery – sliced
  • 1/2 cup Mayo
  • 1 cup seedless grapes – sliced in half *optional
  • salt and pepper to taste

Directions:

  1. Combine all of your ingredients in a large bowl
  2. Mix together until everything is well combined.
  3. Cover and refrigerate for at least 1 hour before serving.

See! Easy peasy and a great quick meal or side. Serve it on with your favorite side or even on a sandwich or salad.
