Peanut Butter and Co. and Bob’s Red Mill have joined together to declare October as Oatober! We were sent a package of different Peanut Butter and Company products as well as a bag of Bob’s Red Mill Organic Rolled Oats to make a recipe – the catch – they had to use both peanut butter and oatmeal! While my normal go-to would be a dessert, I decided to go with a healthier option – natural snack bars! The worst thing in them is the chocolate chips, and once they’re done you have a super chocolaty snack bar to grab that isn’t packed with a bunch of bad ingredients. And the best part, they’re pretty easy to make!

  • 1/2 cup Peanut Butter and Company Cinnamon Raisin peanut butter
  • 3/4 cup Raw Honey
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 tsp Vanilla
  • 1 1/2 cups Bob’s Red Mill Rolled Oats
  • 1 cup Sweetened Coconut Flakes

Directions:

  1. In a medium sauce pan, combine your peanut butter and honey and cook over medium heat. Stir constantly until the mixture is smooth and everything is melted.

  3. Add in your Vanilla, oats and coconut and mix until well combined.
  4. Push into a buttered 8″ x 8″ dish, and refrigerate for 1 hour before cutting.
  5. Cut into squares and enjoy immediately or store in an air tight container in the fridge.
