Chocolate Vegan Cupcake Recipe

Everyone loves cupcakes. But finding a cupcake that everyone can have is sometimes harder than you’d think. We love them in our house, and love taking them to events and parties. Besides being gluten free, we do like to make sure our cupcakes are ones that everyone can enjoy. So we came up with these yummy Chocolate Vegan Cupcakes. They’re easy to whip together, and your guests will love them.

Ingredients:

  • 1 1/2 cups Oat Flour (or blend 1 1/2 cups of flour in a blender until fine)
  • 1/2 cup Sugar
  • 1/2 cup Cocao Powder
  • 2 tsp Baking Powder
  • Pinch of salt
  • 1 mashed Banana
  • 1/4 cup Vegetable Oil
  • 3/4 cup Almond or Soy Milk
  • 1/2 Tbsp Apple Cider Vinegar
  • 1 tsp Vanilla

Frosting:

  • 2 cups Powdered Sugar
  • ½ cup Vegetable Shortening
  • 1 teaspoon Vanilla
  • Optional: food coloring
  • Up to 5 tablespoons water

Directions:

  1. Preheat your oven to 350 degrees and line your cupcake pan with liners.
  2. In your mixer bowl add your oat flour, sugar, cocoa, baking powder and salt. Mix together well.
  3. Add in your banana, vegetable oil, milk, apple cider vinegar and vanilla. Mix until smooth.
  4. Fill your cupcake liners 2/3rds of the way. Bake 20-25 minutes or until a tester comes out clean.
  5. Cool completely before frosting.

Frosting Directions: 

  1. Add your powdered sugar, shortening and vanilla your mixer. Mix together until smooth and the consistency you want for piping. Add food coloring if you want and mix until smooth.
  2. Frost your cooled cupcakes.
