Glowing Frosting on cupcakes
Cupcakes are fun – what could make them more fun? How about if they glowed?! There is a quick tip you can do to make your cupcakes light up under black light! So simple, so fun and it adds a little fun flavor to your regular icing too!

These are gluten free, make sure your food coloring is gluten free – I use McCormick for mine! Just think how fun these would be at a bumper bowling party that uses black light!

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon Vanilla Extract
  • 1 cup White Rice Flour*
  • 1/2 cup Tapioca Starch*
  • 1/2 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/4 tsp Salt
  • 1/2 cup water
  • 1/2 cup milk

* You can also use 1 1/2 cups of all purpose flour if you don’t have to make this gluten free!

Directions

  1. Preheat your oven to 375 degrees.
  2. In a small bowl, cream butter and sugar until light and fluffy.
  3. Beat in egg and vanilla.
  4. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture.
  5. Add milk, dry mixture and water until well combined. End on a wet ingredient.
  6. Fill paper-lined muffin cups two-thirds full. Bake for 15-18 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes before removing from pans to wire racks to cool completely. Frost cupcakes.

Glowing Passion Fruit Frosting: 

Ingredients

  • 1/2 cup Room Temperature Butter
  • 3 cups Powdered Sugar
  • 1 tsp Vanilla Extract
  • 3 Tbs Milk
  • Orange Food Coloring
  • 1 (3 oz) box of Passion Fruit Jello
  • 1 cup water
  • 1 cup Tonic Water

Directions

  1. In a small sauce pan boil 1 cup of water.
  2. Once your water is boiling remove from heat, add in your tonic water and whisk in your oz of jello mixture. Allow to cool completely.
  3. In your mixer mix together your butter, powdered sugar, vanilla, milk until smooth and easy to pipe.
  4. Add in your orange food coloring (or red and yellow) until your frosting is the tone of orange you want.
  5. Pipe your frosting onto all of your cupcakes.
  6. When your cupcakes are frosted take them one by one and dip the frosting into the cooled jello mixture. Flip them back over and put on a cooling rack until dried.
  7. Shine your Black Light on them and enjoy!
