Chocolate bacon cupcakes
Ever have a day where you just need to bake? How about when you want something salty and sweet? I’m not just talking about certain days during a cycle. I’m talking about something rich and delicious that hits all the right spots. That’s the kind of day I’m having. So what do you about it? BAKE!

How about some rich chocolate cupcakes from scratch with some chocolate buttercream frosting topped with vanilla sea salt and fresh bacon? Are you drooling yet? I know I am! The vanilla and the vanilla sea salt are items I’m currently reviewing from 240Sweet and you will learn a lot more about them very very soon!

Oh yah – these are gluten free too 🙂 You will need 2 sticks of real butter for this and a pound of bacon!

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon Bourbon Barrel Aged Vanilla (You can used vanilla extract as well.
  • 1-1/2 cups gluten free flour mixture (my mixture is 1 cup white rice flour and 1/2 cup Expandex – OR for gluten full cupcakes use 1 1/2 cups all-purpose flour)
  • 1/2 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/4 Vanilla Sea Salt
  • 1/2 cup water
  • 1/2 cup milk

Directions

  1. Preheat your oven to 375 degrees.
  2. In a small bowl, cream butter and sugar until light and fluffy.
  3. Beat in egg and vanilla.
  4. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture.
  5. Add milk, dry mixture and water until well combined. End on a wet ingredient.
  6. Fill paper-lined muffin cups two-thirds full. Bake for 15-18 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes before removing from pans to wire racks to cool completely. Frost cupcakes.

Frosting:

  1. Cream butter and vanilla
  2. Combine sugar and cocoa
  3. Add sugar and cocoa mixture to butter
  4. Add milk to and butter mixture. Start with 2 tbsp. of milk, add additional if needed.

Toppings:

  • Take 3 pieces of bacon and put them in a zip top bag – close the bag and crush the pieces. Open the bag up a little and sprinkle on the top of the frosting. YES -I said you needed a whole pound of bacon – who’s going to really fry up just 3 pieces? Use it on a salad, on burgers, or even just eat it! You know if I said you needed only 3 pieces you would still cook it all!
  • Sprinkle a PINCH of the Vanilla Sea Salt on top of the frosting. I get yelled at about this too. “My pinch isn’t the same as your pinch”. Reach in with your two fingers and pinch – that’s all it means! It will vary – but do it to your liking. If you want it to be standard, some measuring spoons have a “just a pinch” spoon. I know – I have one. It’s great for collecting dust! PINCH the salt and sprinkle 🙂
