Chicken and Pepper Stir Fry
Last night I was at a loss of what to make for dinner – I knew it would have chicken, but that’s about all I had figured out. I dug in the fridge and found we still had some peppers and veggies that needed used. I proceeded to slice them all up and figured I’d make a stir fry for dinner. It was quick, delicious and there weren’t any left overs!

Ingredients: 

  • 1 lb boneless skinless chicken cut into 1 inch pieces
  • 4 tbsn Olive Oil Separated
  • Salt & Pepper to taste
  • 1 small onion, sliced
  • 10 oz white mushrooms, washed and sliced
  • 3 Bell Peppers (color of your choice) sliced thinly
  • 2 tbsn Gluten Free Soy Sauce

Directions:

  1. In a large skillet or wok heat 2 Tbsp of Olive Oil and add in your chicken, salt and pepper. Cook for about 5-6 minutes stirring frequently until almost completely cooked through.
  2. Add in additional 2 Tbsp of Olive oil and your sliced vegetables. Cook, stirring frequently until soft.
  3. Add in your soy sauce and continue to cook for 3-5 minutes until your vegetables and meat being to brown on the edges.
  4. Serve over long grain rice – Enjoy!
