Chicken and Broccoli Alfredo Recipe

On any given night, if I ask what my boyfriend wants for dinner it will include chicken and cheese. But his favorite meal is always Chicken Alfredo. He’s always on a quest to find the perfect Alfredo that isn’t too greasy but is still creamy and delicious. This recipe is perfect for what he’s looking for, sneaks in some veggies and is still super creamy. I make this with some Fettuccine for him, and gluten free noodles for me.


  • Chicken and Broccoli Alfredo Recipe1 lb.  Pasta of Choice – prepared according to package directions. Fettuccine noodles are the most traditional, but this is great with any noodles!
  • 1 Rotisserie Chicken, meat removed and torn into bite-sized pieces
  • 1 12 oz. bag Frozen Broccoli Florets
  • 2 Tbsp Water

Sauce Ingredients:

  • 1 cup Butter (2 sticks)
  • 4 cloves fresh Garlic, peeled and finely minced
  • 8 oz. Cream Cheese, softened
  • 1 1/4 cup Half & Half
  • 1/2 cup Chicken Stock
  • salt and pepper to taste,
  • 1 cup Parmesan Cheese
  • I small bunch fresh parsley, chopped
  • additional Parmesan cheese, to serve


  1. In a medium bowl add your frozen broccoli florets and 2 tablespoons of water. Microwave on high for 2 minutes until cooked and tender. If you need additional time cook in 30 second increments. Once cooked, drain off the additional water and set aside.
  2. In a medium pot, cook your pasta according to the package instructions.
  3. Remove the chicken from the bone of the rotisserie chicken and chop into bite size pieces, set aside.
  4. In a medium saucepan add your butter and garlic and cook over medium heat. Saute for 1-2 minutes until just beginning to brown. Add in your cream cheese, half and half and chicken stock. Stir continuously until your cream cheese is melted and fully integrated.
  5. Reduce your heat and cook over low heat for 15 minutes until your sauce thickens. Remove from heat and stir in your half cup of Parmesan Cheese. Season to taste.
  6. Add your chicken, broccoli and pasta into a large bowl, top with your sauce and mix until combined. Top with more Parmesan cheese and chopped Parsley.
