Chicken and 40 cloves
Some of the fanciest meals are pretty quick and easy to make. This is just one of those meals, a few ingredients, a little patience and you have a delicious dinner. But remember you better like garlic!

Chicken and 40 cloves

Ingredients:

  • 1 whole chicken (about 6 lbs) cut into 8 pieces – if you don’t feel like being a butcher, ask them to cut it for you or just buy the parts you want.
  • 1/2 cup plus 2 tablespoons olive oil
  • 10 sprigs fresh thyme
  • 40 peeled cloves garlic – this is about 2-3 heads of garlic. You can even buy pre-peeled garlic cloves!
  • Salt and pepper

Directions

  1. Preheat oven to 350 degrees F. Pour 2 tablespoons of olive oil into a pan that can go in the oven or a dutch oven.
  2. Add your salt and pepper and brown your chicken on all sides. This will take a couple minutes on each side. Remove from heat.
  3. Add in your 1/2 cup oil, thyme and garlic.
  4. Put your cover on and bake for at least 90 minutes until your chicken is done.
  5. Remove from the oven and let sit for 5-10 minutes so the juices redistribute.
