Cherry Spice Vodka CupcakesSometimes, it’s time for an adult treat. Sometimes, it’s time for something with some Balls… Yup, I said it! A sweet treat with a little kick in it like Balls Vodka. They sent me a liter of their Vodka that has been distilled 4 times, and asked me to make a recipe. Of course they were thinking a drink – and of course I started baking.

Cherry Spice Vodka CupcakesBalls Vodka creates a super smooth drink, there’s no smell to the vodka, and it just gives your drink just the kick you’re looking for. Unlike other brands, there’s not an overpowering taste that make it hard to stomach. Balls works well in recipes – it wont alter the tastes you’re going for, but still provides the alcohol content you want.

When I set out to make my Vodka treat, I actually had started with the idea of making the spicy cherry cupcakes – similar to a spicy drink. I changed my mind a couple times, and then decided I wanted to try a White Russian Cupcake (those will be coming soon!). When I started baking, I went back to my original plan, and boy am I glad I did! The cupcakes are moist and not overly sweet, the frosting is a bit savory and a little hit of booze. These are some the best boozycakes/drunkcakes I’ve ever had and they were super simple to make too! Who knew Vodka cupcakes were so good?

Ingredients:

  • 1 cup unsalted Butter, softened
  • 4 Eggs
  • 1/2 cup Balls Vodka
  • 1 tsp Vanilla Extract
  • 2 cups Gluten Free Flour Blend (or 1 1/4 cup White Rice Flour, 3/4 cup Tapioca Starch)
  • 1 cup Sugar
  • 3-1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 Tbsp Cinnamon
  • 1/4 cup Cherries Pitted and Chopped (Fresh or thawed from frozen)

Frosting:

  • 1/2 cup unsalted Butter, softened
  • 4 Tbsp Cream Cheese
  • 1 tsp Balls Vodka
  • 2 Tbsp Milk
  • 4 Cups Powdered Sugar (+ additional as needed)

Directions:

  1. Preheat your oven to 350 degrees.
  2. In your mixing bowl cream together your butter and sugar until light and fluffy. Slowly add in your eggs and vanilla. Add in your vodka and mix until combined.
  3. In a medium bowl, Whisk together your flour, salt, cinnamon, baking powder. Slowly integrate into your wet mixture.
  4. Hand mix in your chopped cherry bits.
  5. Place in a prepared cupcake pan with liners, filling each 2/3 full. Bake for 18-20 minutes until a tester comes out clean. Mix should make 18 cupcakes.
  6. Allow to cool in the pan for 10 minutes, before moving to a wired rack.
  7. Prepare your frosting: Combine your butter, vodka, cinnamon, milk and powdered sugar in a large mixing bowl. Increase the powdered sugar if you need a more pipe-able consistency.
  8. Once your cupcakes are cooled, frost and enjoy!
