Celebrate Cinco de Mayo with this Easy One Skillet Beef and Rice Casserole & Goya

Mexican Beef and Rice Casserole recipe one potCinco De Mayo is one of my favorite holidays to celebrate – for no other reason than I absolutely love Mexican food. Any excuse to have a good Mexican meal makes it rate highly in my book. But this year we wont have time to run down to Mexican Village for an authentic meal with our work schedules. Since we’ll still be craving the spices and flavors of our favorite meals – I whipped up a One Skillet Beef and Rice Casserole. It’s made with some of our own homemade spice mixes and some of the new Goya Better For You Products – so it’s not only gluten free but also low sodium – so absolutely perfect for our home. Don’t worry, there is still plenty of cheese in there too!

goya better for you products reviewGoya sent us a selection of their new Better For You products. The line features over 300 products with over 40 variations of low sodium and organic beans, organic olive oil, organic rice, brown rice, quinoa, chia, amaranth, frozen vegetables, fruits, coconut water, diet beverages, and low sodium condiments. Our package had black beans, low sodium Adobo, Minced Garlic, Tortillas, Ancho Chilis, Lemon Juice, Spices, Olive Oil and Corn Oil. Pretty much everything I needed for this recipe and a couple extra things to stock my pantry. I honestly kept saying “yum” when I opened the package – it was dinner waiting to happen and instantly meal ideas started dancing in my head.

Mexican Beef and Rice Casserole recipe one potFor our Cinco de Mayo inspired meal I based it on a recipe I found on Damn Delicious. I did change it to fit our liking and a couple items we had already, but the recipe is as easy as it claims and delicious. With the Goya Better For You products we cut the sodium even more than we normally would and we still had a delicious meal full of flavor.

Ingredients:

  • 1 Tbsp Goya Olive Oil
  • 1 lb Ground Beef
  • 1 Onion, diced
  • 2 Tbsp Goya Minced Garlic
  • 1 recipe Homemade Gluten Free Taco Seasoning 
  • 1 cup Jasmine Rice
  • 1 cup Homemade Chicken Stock
  • 1 (15-ounce) can Goya Black Beans, drained and rinsed
  • 1 (10-ounce can) Mild Chunky Salsa
  • 1 can Low Sodium Corn Kernels, drained
  • 1 tsp Chili Powder
  • 2 Tbsp Goya Lemon Juice
  • 1 1/2 cups shredded Cheddar Cheese
  • 1/2 cup shredded Mexican Cheese Blend

Mexican Beef and Rice Casserole recipe one potDirections: 

  1. In a large skillet add in your olive oil, onion, garlic and ground meat. Cook on medium high until your meat is cooked all the way through and your onions are softened.
  2. Add in your taco seasoning mix and stir everything together. Add in your broth, rice, corn, beans, chili powder and salsa. Mix all ingredients together and heat to a boil. Reduce your temperature to low and place the lid on your skillet. Cook for 15-20 minutes or until your rice is cooked all of the way through. Add in your lemon juice and mix it in.
  3. Remove your casserole from heat and top with the cheese. Replace the top of your skillet and let it sit for about 5 minutes until your cheese is melted.
  4. Serve with sour cream and in tortillas with your favorite toppings.
