cauliflower au gratin recipeWe’ve been trying to minimize the amount of starches we have in our meals, so a lot of our potato and rice dishes have been replaced with cauliflower. That however, doesn’t mean we don’t crave some of those staples we’ve been use to over the years, so we ended up coming with a delicious recipe for cauliflower au gratin. The recipe is based on my potato au gratin recipe – and there’s a good chance, it’s not really any healthier for you. However, it is a great alternative to the potato version, and pretty easy to make!

cauliflower au gratin recipeIngredients:

  • 1 head of Cauliflower
  • 2 tbsp Butter
  • 1/4 cup White Rice Flour
  • 1/2 cup Milk
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 1/2 cup Shredded Cheese of your choice (we prefer cheddar)

Directions: 

  1. cauliflower au gratin recipePreheat your oven to 350 degrees.
  2. Chop your cauliflower into small pieces, approximately 1 inch or less. Wash and place in a pot of boiling water for 10 minutes. Drain and set aside.
  3. In a medium sauce pan, add your butter and salt and pepper. Heat over medium low heat until the butter is just melted and add in your flour and mix until a roux forms. Add in your milk and whisk everything together. Over low heat add in 1/2 cup cheese and stir until the cheese just starts to melt.
  4. In your Fiesta Square Baker lay half of your cauliflower in the bottom. Pour half of your cheese sauce over the cauliflower and sprinkle on half of the remaining cheese. Repeat with remaining ingredients.
  5. Bake for 45 minutes until your cheese is melted and bubbly. Allow to cool for a few minutes and serve warm.
