Something about summer means fresh, bright flavors like lemon and lime. And while the traditional addition to drinks are great, there’s something so great about adding them to cakes and other treats. These lime cupcakes are inspired by DreamWorks Home’s slushy flavor – Busta-Lime. We didn’t add any color to our frosting, but the flavor of lime is definitely present. These fun cupcakes are just what your summer parties were missing. Oh, and don’t forget – they’re gluten free!
- 1 Large Egg
- 1 Large Egg White
- 1/2 cup milk
- 1 tsp Vanilla
- 2/3 cup White Rice Flour
- 1/3 cup Tapioca Starch
- 3/4 cup sugar
- 2 tsp Baking Powder
- 1/4 tsp salt
- 5 Tbsp unsalted Butter, room temperature
- Juice from 1 Lime
- Zest from 1 Lime
Directions:
- In your mixer combine your butter and sugar until creamed together. Add in your egg, egg white, vanilla and milk. Mix on medium speed until well combined.
- In a medium bowl, combine your white rice flour, tapioca starch, salt and baking powder. Slowly add into your batter mixture in the bowl.
- Once everything is combined, add your lime juice and zest and mix until completely combined.
- Bake at 350 degrees for 15-18 minutes in a lined cupcake pan until a tester comes out clean. Cool for 10 minutes in the pan before moving to a cooling rack to cool completely.
Frosting:
- 8 oz Cream Cheese, room temperature
- 3 oz Butter, room temperature
- Zest from 1 Lime
- Juice from 1 Lime
- 2 Tbsp Milk
- 4 Cups Powdered Sugar
- Optional – Green Food coloring
Directions:
- Combine all ingredients in your mixer bowl until smooth.
- Add more powdered sugar if you want thicker/piping frosting.
