I recently was challenged to make a recipe with some of the delicious chicken I received from Zaycon Fresh and some of the products Chicken Soup for the Soul sent me. I racked my brain for the longest time, but needed a quick meal idea and went to an old standby and adapted it.
As the weather warms up, I love making chicken salad. Let’s face it – it’s easy to make, tastes great, and even better yet – doesn’t heat up the house! But I made it with the Zaycon chicken I had canned, and a bit of the Chicken Soup for the Soul Honey Barbecue sauce – and dinner was done in no time!
- 2 cans of home canned chicken
- 2 stalks of celery
- 1 medium onion
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/4 cup mayo
- 1/8 cup Chicken Soup For the Soul Honey Barbecue Sauce
Directions:
- Open your jars and drain the juice from inside. Chop your chicken into small pieces. Chop the onions and slice your celery.
- Add all ingredients to a large bowl and mix until well blended.
- Refrigerate for at least 2 hours before serving so the flavors meld together.
This will give you a fun twist on an old classic. Serve by itself or on toasted bread with some fresh crunchy romaine.
Barbecue Chicken Salad Sandwiches
Ingredients
