Last week I was left with only ground beef in the freezer. I had no idea what to make for dinner – I didn’t want the usual burgers, or goulash. So what would you make? I really wanted something with beef and barbecue sauce. So I did a little research and found some recipes online – but didn’t like everything in them – so off to creating something in the kitchen. It came out and was delicious!
Ingredients:
- 1 lb of ground beef
- 1 can of corn (drained)
- 1 can of tomatoes and peppers (15 oz)
- 1 packet of Onion Soup Mix – or 5 tbsp homemade gluten free onion soup mix.
- 1 cup barbecue sauce
- 1 box gluten free Bisquick
- 1/3 cup vegetable Crisco
- 3 eggs
- 2 cup Milk
Directions:
- Preheat your oven to 350 degrees.
- In a large skillet brown your ground beef. Drain off the grease and return to the pan.
- Add in your corn (drained), canned tomatoes, onion soup mix and barbecue sauce. Stir until well mixed.
- In a large bowl mix together Bisquick and ingredients according to the packaging. I add a little more milk so it’s easier to spread.
- Add your biscuits on top and smooth them out.
- Bake for 45 minutes until your biscuits begin to brown on top.
It’s a quick and easy meal that is full of flavor!
