The first recipe I made was Balsamic and Rosemary Chicken. It’s as simple as combine the ingredients, bake and enjoy. It’s delicious and so easy to make!

Ingredients:

  • 2 lbs boneless, skinless chicken breasts – at least in 4 pieces. The smaller the better.
  • 1/3 cup gluten free Soy sauce (look for Kikkoman’s or Little Soya!)
  • 1/3 cup balsamic vinegar
  • 1/4 cup agave nector
  • 4 cloves garlic, minced
  • 4 large shallots, thinly sliced
  • 2 tbsp fresh rosemary – You can use dried as well!
  • 1 tsp black pepper

Directions:

  1. Preheat your oven to 350 degrees
  2. Prepare a 13 x 9 baking dish. Place your chicken in the dish and cover with sliced shallots.
  3. In a small bowl combine your soy sauce, vinegar, agave, garlic, pepper and rosemary. Whisk together until well combined. Pour over your chicken and shallots until well coated.
  4. Bake for 1 hour until chicken is done.

Enjoy with salad, rice or potatoes. This would even be great over a salad!
