Have you ever felt yourself in a dinner rut? I do often, and I don’t want to eat the same thing every night so I try to shake it up again. I like surprising my family with stuffed chicken with what we have in the house, sometimes it’s sun dried tomatoes, others it’s bacon and goat cheese. This dinner looks a lot harder and fancier when plated, but you’ll be shocked how easy it is to make this stuffed chicken. And get ready for your family for requesting more often!

Ingredients:

  • 4 6-oz. Boneless, Skinless Chicken Breasts
  • 4 oz. Goat Cheese, divided
  • 6 strips of cooked Bacon, crispy and crumbled
  • 6 Basil leaves, rolled and sliced thin
  • Salt and pepper, to taste
  • 1 cup Balsamic Vinegar

Directions:

  1. Preheat oven to 375 degrees.

  6. A few minutes before removing the chicken from the oven, start making the balsamic glaze. Heat balsamic vinegar in a small sauce pan over medium-high heat. Stir while heating until the vinegar is reduced to about 1/3 of its original volume. It will form a thick, syrupy consistency when it is ready.
  7. To serve, place a stuffed chicken breast on each plate and drizzle with balsamic glaze. Pairs well with a mixed green salad or roasted vegetables.
