Armadillo Eggs Recipe

Have you ever seen a recipe and just had to make it? That’s what happened when I saw a picture of Armadillo Eggs. Whenever I’ve told people what I’m making the ask “What the heck is that?” It’s cheese stuffed peppers wrapped in meat that can be grilled or baked. I had to try it myself – yummo!

Ingredients: 

  • 2 lbs ground beef
  • 10 small sweet peppers
  • 1 cup shredded cheese – I used a cheese blend of different cheddar cheeses
  • 1 tsp salt
  • 1 tsp pepper
  • 1 small onion diced
  • 1 egg
  • 1 cup bread crumbs (for gluten free use corn flake crumbs or gf bread crumbs)
  • 1 cup barbecue sauce

Directions:

1. Preheat your oven to 300 degrees.

2. In a large bowl mix together your meat, salt, pepper, bread crumbs, egg and diced onion until well combined.

3. Take your peppers and slice the top off of each. Make sure you have removed all of the seeds and extra membrane in side. Rinse and set aside.

4. On your cutting board place approximately 1/2 cup of your meat mixture and flatten it as much as possible. Take one small pepper and stuff with as much cheese you can fit in there. Place in the center of the meat patty.

5. Take the sides of the meat patty and put it up over the pepper. Do the same with the front and back of the meat so that the peppers are completely covered.
6. Take each “egg” in your hands and roll it around to form more of a round shape. Transfer to your cooking sheet.

7. Bake or grill for 30 minutes.

8. Remove your eggs from the oven and brush barbecue sauce on each side. Place back in the oven.

9. Bake an additional 20-30 minutes until cooked throughout.

  1. I will have to send you my recipe for them too. I use sausage and wrap in bacon with regular jalapenos. OMG I love Armadillo Eggs, it’s a TX thing, we make them all the time. I am going to try this way though, just in case it is as good as the ones we make. Thank you!
