I find when I want a quick snack in the afternoon, I tend to run for junk food. But why do that when you can have something that’s delicious and good for your body? We make juice in our house to help boost our vitamins, not as meal replacements – and honestly I crave less junk when I have at least one glass of juice a day. That doesn’t mean I still don’t hit up the chocolate when I need it, just I tend to need it less. So this is my afternoon boost juice – full of vitamins and things my body needs, and helps me go from running a business during the day, to teaching at night.
- 2 Roma Tomatoes, ends removed
- 2 cups strawberries hulled
- 2 cups grapes
- 2 cups greens (spinach, kale etc)
- 1 cucumber
- 3 apples, cored and cut
- Wash all of your ingredients well and strain extra water off.
- Place through your juicer. Mix together with a spoon and pour into individual glasses or jars.
- Shake and enjoy – drink the rainbow!
This recipe makes about 4 pint jars of juice (8 8 oz servings). We make a new set every day and drink a glass in the morning and one in the afternoon. It’s super quick to make and great to have on hand!
