One of my favorite meals growing up was grilled cheese. OK, I’ll be truthful – it still is for a quick lunch. There is just something about the crunchy bread, the gooey cheese and it tastes perfect. It doesn’t need tomato soup, in my opinion, just a small bit of chips or veggies is the perfect quick meal.

For years my grilled cheese has been standard, bread, sliced American cheese and occasionally a slice of ham tossed in there. It’s been tasty – there is no real reason to change right? Then I was introduce to a fantastic cookbook 150 Best Grilled Cheese Sandwiches, published by Robert Rose Inc. The book is amazing, to say the least!

I know, we all have our favorite grilled cheese recipes. But I flipped through the pages and looked at the recipes. They’re simple, and delicious it’s hard to not try them all. The first one I had to try was a Prosciutto-Feta Grilled Cheese, with spinach tomatoes and a bunch of other flavor rich ingredients.

Each recipe changes how you traditionally think of grilled cheese, by including ingredients you may (or may not) have already in your home. Simply assembly and even better – quick cook times.

When I made the sandwiches, they reminded me of something you would pay $7 or more for at a local deli. Delish! Pair them with your favorite sides and they will help make a fancy and easy lunch.

The cookbook has so many delicious recipes inside, you could easily make one or more for a meal just to try them out. You can check out one of the recipes below!

Classic Grilled Two Cheese


  • 8 slices white or whole grain bread
  • 2 tbsp butter or margarine softened
  • 4 oz Muenster cheese, thinly sliced
  • 4 oz Cheddar cheese, thinly sliced


  1. Brush one side of each bread slice with butter. Place on a work surface, buttered side down. Top 4 bread slices equally with Muenster and Cheddar Cheeses. Cover with remaining bread slices, buttered side up, and press gently.
  2. Place sandwiches on preheated panini grill or in a large skillet over medium heat and cook. Turning once if using a skillet, for 3 to 4 minutes or until golden brown and cheese is melted. Serve immediately.

  1. I really like to make grilled cheese sandwiches with pepperoni on them. The comment above mentions a jalapeno popper grilled cheese and that sounds yummy.

  2. My favorite is the old standby but I’ve been wanting to try to add some twist by changing it up. I would like it with tomato or with different types of cheese. I also heard yesterday that its good with dill pickles inside! Yum!Thanks for the chance to win!

  3. I like to use Colby-Jack cheese, with most of the sandwich’s flavor coming from the bread, which I make in my bread machine. Onion bread is our latest favorite.

  5. My favorite grilled cheese sandwiches are ham and swiss (or american) for lunch or, for breakfast, cream cheese and homemade blueberry jam. YUM!!!!
